Lemony Vegetable Tabbouleh Recipe

For : 3 people - Preparation time : 15 minutes - Gluten- free , vegetarian, raw

This is the perfect recipe for sunny lunches this summer! Rich in minerals, amino acids, trace elements and good fatty acids. Your body will regain energy and your skin will glow – a great inside out recipe that boosts without weighing you down.

The ingredients:

  • 1 small head of cauliflower reduced to small crumbs (mix in a food processor)
  • 1 cucumber cut into small cubes
  • 4 small tomatoes cut into small cubes
  • 1 red onion finely chopped
  • 2-3 large handfuls of mint finely chopped
  • 2 lemons (juice)
  • Olive oil (be generous!)
  • 2 handfuls of pumpkin seeds
  • 200 g chickpeas
  • sea ​​salt and pepper

Preparation :

Mix everything together and enjoy.
This salad is eaten during the day, the raw cauliflower reduced to crumbs does not keep long.
